Thank you, Italians, but from now on, we're taking over. We present to you this beloved sweet bread, but with a technological upgrade.

So how exactly is our Panettone better than any other you might have tried so far? We create it exclusively with our sourdough starters, so the production process can take a while. That, however, is no problem for us because making a better Panettone just takes time. To be exact, from mixing the ingredients to packaging the product, it takes us exactly four days. This gives a product with a longer shelf life and a special structure that just melts in your mouth.

All of this with no additives!

Ingredients: Enriched wheat flour T550, butter (milk), sugar, pasteurized egg yolk (egg), mandarin paste (mandarin peel, glucose-fructose syrup, sugar), white chocolate 7% (sugar, cocoa butter, whole milk powder, emulsifier [soy lecithin], natural vanilla flavor), candied mandarin (mandarin peel, glucose-fructose syrup, sugar), cocoa butter, salt, orange extract, vanilla extract (vanilla concentrate, vanilla seeds).  

Topping: Almonds, granulated sugar, pasteurized liquid egg whites (egg), enriched wheat flour T550, corn starch, vegetable sunflower oil.  

May contain traces of sesame.

Storing:BoogieLab panettone has a shelf life of 90 days. To preserve its freshness, keep it tightly sealed in the bag that it comes in and store it at room temperature away from direct heat or sunlight.

Our secret ingredient – TIME

DAY ONE

We love challenges and lengthy processes, which is why BoogieLab Panettone is produced exclusively with wild yeasts. We feed this starter a total of 3 times, around every 4 hours, before it reaches its top form – this is when we first mix the batch. After that, we eagerly wait for 18 hours while it sits and ferments.

DAY TWO

Now we add some more butter, eggs, and milk to the batch, creating basically the second version of it. When we are done mixing this second version, we let it ferment for another 2–4 hours before shaping it and letting it sit for the final fermentation process.

DAY THREE

When the Panettone is finally ready, we send it off to bake. When it’s done, we turn it upside down and let it cool in this position. This is a necessity because the dough is so rich that it would otherwise collapse on itself. This way, the only ones collapsing are us.

DAY FOUR

After minimally 12 hours of cooling in this upside-down position, the Panettone is ready to be packaged into our specially designed boxes. This is the part where you come to pick it up and become the new favourite family member.

How many servings does one Panettone offer?

A 500-gram Panettone is perfect for 6–8 servings, while a 1-kilogram Panettone serves 10–12.

We recommend cutting the Panettone in half without removing the paper mold, then slicing it into smaller pieces to serve. To maintain its original freshness and moisture, keep the Panettone tightly sealed in the bag it comes in. Store it at room temperature.

What’s the shelf life of the Panettone?

BoogieLab Panettone has a shelf life of 90 days, achieved through extensive research and a unique combination of dough fermentations. This level of longevity is almost unheard of for artisanal Panettone, as most on the market today last only about a month. For the best freshness and flavor, we recommend enjoying it within the first 45 days.

How soon should the Panettone be consumed after opening?

After opening the Panettone, we recommend consuming it within 10 days, provided it is stored tightly sealed in the bag it came in.

⁠Does the Panettone contain preservatives or additives?

BoogieLab Panettone does not and will never contain preservatives or additives. This makes it a true artisanal sourdough Panettone—the only kind acceptable in our bakery. We've achieved all its benefits through a combination of traditional craftsmanship and modern technology.
